It’s about three months now that we’ve been in some sort of lockdown mode due to Covid. As they say, there’s always a silver lining to a negative situation. In this case, my silver lining has been cooking and baking, filming How To videos and of course spending hours making cards in my stamping studio.
Check out my galleries since March 2020 and you can see all the cards that I’ve made-paper pumpkin kits, extras, fun folds, DSP, and now I’ve started to use products from the new annual catalog. But, let me get back to that silver lining. I love to bake, but I don’t do it daily or even weekly. We’re all watching those calories, right? Being stuck in the house or kitchen, LOL, I pulled out old classic recipes, some from my cookbook, Behind Every Great Recipe, and others from online searches, etc.
To give you an idea, I’ve made over 25 chocolate chip banana nut breads, 8 harvest bread loaves, dozens of monster cookies, weekly whipped cream, and other favs. What to do? I started my own ‘How To’ YouTube channel and have 7 videos up, 2 are being edited as I type. Who ever thought I’d be doing videos, never mind baking all those breads? I have gifted many breads, and they do get eaten quickly. I’ve got the vegan recipe down, and it’s actually nice and moist, and if I didn’t tell you it was vegan, you wouldn’t know.
Now, any negatives? Sure. It was hard to find baking flour-there was a run on it early on, and there was no yeast and shredded coconut. Add this to no toilet paper and what is one to do? Now I’ve started to see things return to the shelves, thank goodness! We’re far from normal, but at least I’ve got TP and enough flour to do my baking. Oh, and you can get 25 pound bags of King Arthur flour at Costco for $12.99. It’s a steal if you can lift it up off the crate and if you think you will actually use it. I passed on this twice now afraid that once we’re back to normal, I may not be baking so often.
